Every Thursday night we bring you Comfies and Cocktails, our Facebook livestream that combines comfy clothes and cocktails. This week we have a special treat! Comfort Food and Cocktails with Chef Randy Feltis in the Pratt Homes Bistro 6 Community Kitchen.
We were joined by Tamara, who won the chance to cook with Randy while we watched and then enjoyed the food! Actually, Tamara has amazing skills in the kitchen and put the two of us to shame!
Chef Randy was approached by Pratt Homes to help them design a kitchen a chef would love for their new condo development in Barrie. Boy, did they deliver! Chef Randy said the number one thing that was needed was gas stoves. Done. Large islands. Done! Once built, the condos will be a great place for people to entertain. And when they really want to have a gathering, the Community Kitchen will be the place where crowds can cook and enjoy time together.
We were so excited to be the first to enjoy a meal there. Mac and Cheese is a Canadian favourite, and Randy’s take on it was amazing! Here’s the recipe:
Chef Randy Feltis Mac and Cheese
This Canadian favourite uses old white cheddar and the most surprising topping: Goldfish Crackers.
- 100 grams butter
- 100 grams flour
- 1 litre whole milk
- 125 mL dry white wine
- 250 grams aged cheddar grated
- 124 grams mozzarella cubes
- 1 tsp garlic chopped
- 1 tsp shallots chopped
- 1 tsp Dijon mustard
- Salt To taste
- pepper to taste
- nutmeg to taste
- 1.5 litres elbow macaroni undercooked
- 1 bag goldfish crackers
- 75 grams butter melted
In a medium sauce pan, sweat garlic and shallots in butter.
Add flour and cook lightly
Deglaze with white wine and slowly add warm milk to the pot while stirring constantly to avoid lumps.
Cook lightly for 10 minutes, allowing the sauce to thicken.
Turn down heat and add cheddar cheese slowly.
Preheat over to 350 degrees.
Add pasta to sauce and stir in mozzarella and pour into a cast iron pan.
Place goldfish crackers into ziploc bag beat them like they owe you money until you have a large breadcrumb mixture.
Add melted butter and top mac and cheese.
Bake for 20 minutes and serve while hot and golden.
