Crockpot meals are a staple in busy homes during the fall and winter months. While we start getting ready to send the kids back to school, we have a meal idea that is sure to make your weeknight dinners delicious and simple.

Olivia from Olivia’s Freezer in Barrie helps people meal prep and offers tasty recipes too. She helped Sarah make a delicious Lasagna Soup.

Here’s the recipe:

Ingredients (serves 6-8):

5 Italian Sausages, cut in rounds
1 medium onion, chopped
4 cloves garlic
2 tsp oregano
1 tbsp dried basil
1/4 tsp red pepper flakes
1/4 tsp black pepper
1/4 tsp sea salt
1 can diced tomatoes
2 tbsp tomato paste
rotini noodles

300g Ricotta Cheese
1/2 cup Parmesan Cheese


Mix all the ingredients, leaving out the noodles, and put in a freezer bag. When you’re ready to cook, thaw the freezer bag and put in the crockpot on low for the day. Add noodles during the last 20 minutes of cooking.

For the topping: Mix the ingredients and put a dollop on top of the cooked lasagna soup.
